When the world is in chaos, there is nothing like homemade goodies that eases anxiety. Since I have spent A LOT of time at home in the last few days, I have used my time wisely. I pulled this recipe out of the archives when they boys suggested I make something “oatmeal-y”. I had forgotten how delicious these were! So good in fact, that they disappeared overnight and I made another batch.
These are easy, yummy and can easily be adapted for allergies!
So without further ado. Here are the ingredients you need.
Ingredients:
1 cup butter (I used a vegan butter to accommodate my dairy-free kid)
3/4 cup packed brown sugar
1/4 cup white sugar
1 tsp. vanilla
1/2 tsp. salt
2 cups oats
1 1/2 cup flour (although mine was a bit gooey so I added a little extra flour)- You could also use gluten free or whole wheat flour!
1/4 cup boiling water
1 tsp. baking SODA
chocolate chips (about half a package)
Directions:
Preheat oven to 350 and grease a 9×13 pan.
Beat butter, sugars and vanilla. Add flour and salt. Dissolve baking soda in the boiling water. It makes a fun reaction! Add to mixture. Sirt in oats and chocolate chips. Put the dough into the pan. Bake for 15 minutes or until the top is nice and brown. Let it sit until it hardens a bit. I suggest putting it on a baking rack to let it cool so you can eat them faster. These are even better if you let them sit overnight and they get nice and firm. But they are equally delicious when they are warm and gooey.
Honestly, you can’t go wrong with these.
The second time I made them, I melted the butter so I could mix it by hand. I added the ingredients all out of order and they STILL turned out delicious. Making it almost impossible to mess these up.
